Cool Cucumber Pasta

This is refreshing salad for anytime, but it makes a lot so it’s especially good for a backyard barbecue or family get-together.  The recipe does call for quite a bit of sugar, but feel free to reduce the amount to suit your taste.

16 oz. Pasta

1 Tblsp Vegetable oil

2 Medium Cucumbers, diced

1 Medium Red Onion, diced

1-1/2 cup sugar (Sugar amount can be reduced to taste)

1 cup water

¾ cup vinegar

1 Tsp. Prepared mustard

1 Tsp. Dried Parsley

1 Tsp Salt

1 Tsp. Pepper

½ Tsp. Garlic Salt

Cook the pasta according to package directions, drain and rinse in cold water. Place in large bowl. Stir in oil, cucumbers and onion. Combine remaining ingredients, pour over pasta and toss. Cover and chill for 3 – 4 hours, stirring occasionally. Serve with a slotted spoon. Makes 16 –20 servings.
