Since I’ve discussed dreaming about Christopher Lee, I feel I’ve been untrue to my one true love Bela Lugosi, so today I’m making Crockpot Goulash in honor of Bela. Wish he could stop by and eat some with us! (And scare the crap out of my neighbors – wouldn’t that be a blast!?)
Hungarian Beef Goulash (all apologies to any Hungarians who are offended by this version of Goulash)
2 Tbsp. Vegetable Oil
2 lbs beef chuck cut into 2 inch pieces
2 onions, chopped
2 cloves garlic, chopped (keeps the vampires away doncha know?)
1 Tbsp. Hungarian Paprika
1 tsp. caraway seeds
1 Tbsp. Tomato paste
2 Cups chicken broth
1 red bell pepper chopped
Salt and Pepper
(It’s optional to add other chopped vegetables. I added a couple chopped potatoes and carrots)
Warm the oil in a large skillet over medium-high heat – brown beef cubes until brown on all sides then put into a slow cooker.
Next add onions to the skillet and cook until soft – add garlic and saute about 1 minute longer. Stir in paprika, caraway seeds, tomato paste and chicken broth. Season with salt and pepper. Bring it to a boil, then pour over the beef in the slow cooker. Add bell pepper (and other vegetables) stir and cook on low for 6 hours.
I’m going to serve my goulash with egg noodles and sour cream and pay my respects to Bela!
