These are a light, but delicious Brownie - chocolate and mint - what's not to love? They're a favorite around our house, and a nice treat on a cold winter evening.

Junior Mint Brownies

Cooking spray
1/4 cup butter
32 (about 3 ounces) creamy, small-size mints in pure chocolate (such as Junior Mints)
1 cup all-purpose flour
1/4 teaspoon baking soda
1/8 teaspoon salt
2/3 cup sugar
1/3 cup unsweetened cocoa
1 large egg
1 large egg white

Preheat oven to 350 degrees.

Coat bottom of an 8-inch square baking pan with cooking spray.

Combine butter and mints in a 2-cup glass measure; microwave at high 30 seconds or until soft. Stir until smooth, and set aside.

Lightly spoon flour into a dry measuring cup, and level with a knife. Combine flour, soda, and salt in a bowl. Combine sugar, cocoa, egg, and egg white in a large bowl; beat at medium speed of a mixer until well-blended. Add mint mixture; beat well. Add flour mixture; beat at low speed just until blended. Pour batter into prepared pan. Bake at 350 degrees for 20 minutes or until a wooden pick inserted in center comes out clean; cool completely on a wire rack.

Quiche

Our hens are laying a lot of eggs! Everyday we get about 17 - 20 eggs! It's wonderful and crazy! I'm so proud of those little chickens! Well, they aren't so little anymore. We do have a lot of eggs to use though, and we've been eating a lot of eggs and giving away a lot of eggs . . . maybe that's what everyone will get for Christmas this year! Better not put them in their stockings though, that could get messy!

The other day I made quiche - I think I'm the only one who ended up liking it - Gabby didn't care for the texture and David doesn't like cheese, Nathaniel doesn't like anything different . . . but I thought it was delicious! The great thing about quiche is that you can add whatever you like! I made one quiche that was swiss cheese and mushrooms. I made another one that was green peppers and onions. I wasn't sure how it would end up tasting, but I really liked it. You can also add bacon or crumbled sausage, and serve it warm for breakfast (sounds good on a cold morning)!

Here's the recipe I used from The Moosewood Cookbook by Mollie Katzen

1 hour to prepare
4-6 Servings

This recipe makes 1 9” pie. It can be an appetizer or main dish.

1. Make your favorite pie crust or use a refrigerated pie crust from the grocery store

2. Cover bottom of crust with 1 ½ cups grated Swiss Cheese.

3. Cover cheese with:
1 medium onion that has been chopped and sautéed in butter with ¼ lb. Mushrooms with  a dash of salt, pepper, and thyme

4. In another bowl beat well together
4 eggs
½ cups milk
3 Tbs. flour
¼ tsp. salt
¼ tsp. dry mustard

5. Pour custard over mushroom layer.

6. Sprinkle with paprika. Bake at 375º for 40-45 minutes, or until sold in the center when jiggled.

Variations
Substitute cheddar cheese for Swiss
Use fresh tomato slices instead of mushrooms. (Tomatoes don’t need to be sautéed first)
Substitute 1 cup chopped scallions for the onion.
Add 1 tsp. prepared horseradish.

Frankencake!

Maybe you think this should go in This Woman's Touch category, but hey, it's my blog and I'll put stuff where I want to - and think about it! SIX LAYERS!!!!!  HOLY MOSES! SIX!

This is monster of a cake, and it will feed an angry, torch wielding mob with ease. It might seem like a lot of work - but think about poor Dr. Frankenstein and all the work he had to do to make HIS monster, and it's  not like we've asked you to go dig up any parts for this one!

Since I've discussed dreaming about Christopher Lee, I feel I've been untrue to my one true love Bela Lugosi, so today I'm making Crockpot Goulash in honor of Bela.  Wish he could stop by and eat some with us! (And scare the crap out of my neighbors - wouldn't that be a blast!?)

It's getting to be the season for curling up on a chilly night with a big bowl of carmel popcorn and watching some good movies! This is my mom's recipe and it's always been a family favorite.  You can add peanuts to this recipe if you like.
