Blustery Day

Yesterday, I woke up and my knee was KILLING me. I mean I could barely walk – it hurt whenever I bent it. I don’t know what I did, I guess I twisted it at some point, or hyper extended it or some crazy thing. So anyway, yesterday I was on some pain meds. It still hurts today, but it’s getting better (“I don’t want to go on the cart”)*

I decided to make some crockpot stew today – one, because it’s a rather blustery morning and some nice warm stew sounds good, and two, because who doesn’t love cooking with a crockpot? Put your stuff in, turn it on and fuggitaboutit! (Top Chef I am not).  So anyway, here’s what I did:

First, I chopped up some red potatoes and put them in the crockpot.

Next, I chopped up some carrots and put them in too,

After that I added some frozen roast beef broth that I had (from another crockpot meal). You can add whatever type of broth you like – or even some canned soup if you have that on hand. If not, just put some water and seasoning in.

On top of that, I put in some frozen corn. You can add whatever vegetables your family likes – peas, beans, turnips – whatever, someone in my family is rather picky, I won’t mention his name, so I’m only putting in veggies that I know he’ll eat. 🙂

Then I put in a package of stew meat (look away vegans so I don’t gross you out).

Then I put on the lid and set the cooking temperature. It’s so easy. Later, after the broth has had some time to melt, I’ll stir it a bit and maybe add some seasoning if it needs it. If you find that your stew is rather thin, just add a tablespoon or so of cornstarch and stir well – that will thicken things up for you.

Tonight I’ll probably make some cornbread to go with the stew ( because Gabby loves her some cornbread). What an easy supper huh? Yay for easy and soooo cozy!

    I wonder if the weather was bugging your knee; I think barometric pressure and atmospheric moisture changes can affect joints! (Do I sound like an official weather guy? I feel official.) Crockpot stew sounds like a good cure. Don’t worry, Par and Lucy appreciated the graphic illustrations. Oh my gosh, I love cornbread too. Now I feel like making some.
